In honor of the upcoming Apple Blossom Festival, I thought I would try and make a blossom jelly. I saw an ad for cherry blossom jelly once, and with all the beautiful spring blossoms out thought, well, why not. Its the only way to see how it tastes.

I grabbed my measuring cup and headed over to my crabapple tree. I am in love with the colour, and wanted to see if I could put it in a jar. I picked the petals, pressing them down as I went.

The Recipe:

2 Cups blossoms
2 cups boiling water
1/4 cup lemon juice
4 cups sugar
1 pouch liquid pectin

Pour an equal amount of boiling water over the petals, for a few hours or let sit over night.

Strain..

Nannie Annie Tip ~  Turn the petals into paper, by dumping them onto a screen, pressing flat with a rolling pin, then letting it dry.  Add seeds to make Petal Paper that grows.

Add the lemon juice and sugar. Mix and bring it to a rolling boil.

Still a pretty colour.. I added the liquid pectin.  Let boil for 1 minute, stirring the foam. Skim off foam. Pour into sterilized jars. Wipe rims, Seal. & Water bath for 20 minutes.  Enjoy!

 

It tastes and looks a lot like Crabapple Jelly… but better 🙂
