Rose Petal Jelly


All the roses seem to be blooming, and the smell that travels with the breeze was so beautiful that I wanted to capture it in a jar… so I did. I made some Rose Petal Jelly.

I started by picking a healthy bowl of rose petals.. one of my first roses to come into bloom were these wonderful yellow roses.. I love the way they smell, and standing in the middle of them picking them was worth the effort.

Like the Dandelion & Crabapple Blossom jellies,  I started with an infusion of 3 cups of rose petals & 2 cups of boiling water,  and let it sit overnight.
In the morning I strained the infusion into my pot. (I put the used petals on a screen, rolled it flat, and let it dry- now I have some rose petal paper)
I added my sugar and lemon juice to the liquid, brought it to a boil, added my rosewater and pectin, boiled hard for one minute, and put it into sterilized jars. After wiping the rims and placing the lids, I gave my batch of Rose Petal Jelly a 20 minute water bath to seal them.

Recipe:
2 cups boiling water

3 cups Rose Petals

2.5 cups sugar
1/4 cup Lemon juice
3 ounces Liquid Pectin
1 tablespoon Rosewater

Thanks to my helper, Nayeli,  I had more than enough rose petals so I also dried some petals, and made some Rosewater.
